Sunday Supper: Beef + Broccoli Stir Fry



It's been a minute since I've posted a recipe. Though I've only posted a few-- and they've all been baking recipes-- I also love to cook. It sadly is replaced by takeout more frequently than I'd like as of late since our schedules are so crazy...so when I dedicate my efforts to preparing dinner I look for two key things in a recipe: that it's delicious and that it's relatively easy to whip together. 

I found this recipe a few months back on my "Dinner" board and luckily it met all of my requirements aaaand it's such a success -- it's a regular staple in our household now. (Pinterest for the win!)

To make: 



1/2 tsp baking soda
1 tsp. sugar
1 tbsp. cornstarch
1 tbsp. low-sodium soy sauce
1 tbsp. water
2 tbsp. vegetable oil
1.5 lbs. Flank steak, sliced into thin strip
  1. Whisk together the baking soda, sugar, cornstarch, soy sauce, water, and oil in a large bowl and toss the strips in. Coat each piece well and cover with plastic wrap. Place into the fridge to let it fully marinate. (It's best to do this the morning of if you can, if not, you want to give it at least a full hour before using) 
1/2 cup low-sodium soy sauce
2 tbsp. brown sugar
4 garlic cloves, minced
2 tbsp. flour
1 tbsp. red wine (sherry or white wine work too)
3 tbsp. vegetable oil
2 heads of broccoli, crowns only
  1. In a small bowl, stir together the soy sauce, brown sugar, garlic, flour and wine until smooth and set aside. 
  2. In a large saute pan, heat 2 tbsp. of the oil listed above over high heat until simmering. Add in the broccoli crowns and saute them for 3 minutes, making sure to stir often. Then transfer to a plate. 
  3. Reduce the heat to medium-high and carefully add the last remaining tbsp. of oil to the pan. Add the marinated beef and 1/2 of the sauce mixture and saute for 3-4 minutes, continuously stirring until the meat is no longer pink. Stir the broccoli back in and add all the remaining sauce to the pan. Cook for an additional minute and serve. 












Serve with fresh steamed white or brown rice....while I have (and LOVE) my rice cooker and use it daily, not everyone does....if that's the case, Trader Joe's sell boxes of individually packed rice, available in their frozen section. It's ready in 3 minutes in the microwave and works perfectly well in a pinch! Enjoy!!!
