UN-CHOCOLATE CHIP COOKIES


A NEW SPIN ON AN OLD FAVORITE

There are just some weeks that are against you— you know the ones … where everything turns out the exact opposite of how it was "supposed" to go … well, I've had one of those weeks! But I know exactly how to remedy it now that I'm spending some much needed time curled up at home this weekend: homemade un-chocolate chip cookies!!

I don't even care that next weekend is (my) Coachella weekend….I'll go fat. Right now, mama needs some comfort food.

This recipe I've had for awhile and can't remember where I first saw it but it's delicious (and quicker to whip together than you'd imagine, being from scratch) 



To make these you'll need: 

  • 3/4 cup softened butter
  • 3/4 cup sugar
  • 1/2 cup packed brown sugar
  • 1 tsp. vanilla extract
  • 2 eggs
  • 1 + 3/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup semisweet chocolate chips
  • 1/2 cup white chocolate chips
PREHEAT YOUR OVEN TO 375 DEGREES


In a large mixing bowl, mix butter and sugars until light and fluffy {tip: I use a spatula and kind of mash it together 'cuz it blends better than beaters}


You want it to look like this [🔝]

Add vanilla extract and eggs and blend well. The consistency will become a lot creamier once you do this part.

Then using a sifter {like my nifty one shown above} you'll blend together the flour, cocoa, baking soda, baking powder, and salt. And then you'll add it to the wet mixture {that's why  you want to make sure to start the sugars and butter in a LARGE bowl}



{This is the purpose for using a sifter, in case you're wondering "what the hell is a sifter?!" It seamlessly blends all of the dry ingredients together….like how a boxed mix comes}


Once blended with the wet mixture it'll look like this….


Then you'll take your assortment of chocolate and white chocolate chips…


…and you'll mix them in !!


Scoop and roll into 1-inch balls, spaced about 2 inches apart on a lined cookie sheet and pop into the oven for about 9 minutes. {The recipe says to bake for 10-12 minutes but my oven gets HOT….plus a general rule of baking is to take it out before you think they're "done" cuz every minute counts and they're gonna keep baking until they cool….over done cookies suck}


{TRY NOT TO EAT ALL OF THE COOKIE DOUGH WHILE YOU'RE WAITING FOR THE FIRST ROUND TO BAKE….like me}



Take 'em out and let them cool… And nowwww, I am going to enjoy the rest of this beautiful sunset; get into some fat-pants and finish watching the entire season of Girlfriend's Guide to Divorce on Netflix !!
